Skills are non-combat activities that improve as you practice them.
Some of them such as Mining, Woodcutting, and Fishing are referred to Gathering Skills, as you gain XP for these skills by Mining ores, Chopping logs and Catching fish.
Other skills such as Smithing, Crafting, Cooking, and Tailoring are referred to as Processing Skills as to train these, you take raw materials and use them to create different products such as Equipment, Relics, Food and Magical Tomes.
